Bologna, the 'sauciest' Italian

Characterised and recognised due to its age-old attributes, we suggest approaching Bologna from the perspective of all there is to see (Rossa), to get to know (Dota) and, above all, to taste (Grassa) in this city, which is also the capital of Emilia Romagna, the epicentre of an Italy that is always rich when it comes to gastronomy.

ROSSA (tourist spots to SEE and get to know)

The traveller's eyes bulge at its kilometres of porticos and the range of colours in its buildings. That is exactly why we advise looking around it on foot. Visiting at the weekend has the added value that the whole historic quarter is closed to traffic and it is a pedestrian area for two days.

Bologna is marked out in a way by its 5 gates, which are both an entrance to the historic quarter and also let you get to know the 'other city'. Get away to this green lung made up of its gardens and its hills to see it from a height.

You'll find few squares more beautiful than the Delle Siete Chiese, especially when it is lit up. A stronghold for romantics, bohemians and nostalgics.

Like a good Italian, Bologna is also tremendous. The Due Torri, Santa Maria Maggiore and Neptuno are impressive. But you will also come across neverending avenues, the Galerías Cavour (Via Luigi Carlo Farini, 40) to ‘stay fashionable’ and the historical palazzi or buildings restored for cultural purposes, such as the old Town Hall with its marvellous public library called Salaborsa (Piazza Nettuno, 3) - ideal for trips with children.

DOTA (curiosities, warnings and things worth KNOWING)

They say that Bologna is the oldest city in the oldest country in the world. And the truth is that it has the oldest University in Europe, which not only students from all over Italy want to attend, but also from all over Europe - especially Erasmus students - and ones from further afield. Note: get a place in Law or Fine Arts. In the streets and bars, don't be surprised to hear more than one or two languages at a time. It's not only the tourists but also the people who have chosen to study and live in this city. Because there is lots of Italy beyond Rome, Venice and Florence...

The capital of Emilia Romagna is eminently a city of fairs, and it houses one of the most modern and functional trade fair venues of old Europe, BolognaFiere.

With good connections, the bicycle is the preferred form of local transport, but the bus is the quickest way to move around ‘fuori porte’. But be aware that paying for a ticket on board is a little more expensive than purchasing it in advance at a newsagents. There are a few places where you can learn the art of making homemade pasta but two stand out: the Vecchia Scuola Bolognese (Via Galliera, 11) and La Bottega Due Portici (Via Independenza, 69).

GRASSA (where and what to EAT and drink)

In Italy you can't really eat badly anywhere, but it's a fact that in Bologna you eat especially well. Its title of città del cibo (food) is as right as it is true.

The pasta that identifies this land is the tortellini, and the sauce, ragù. To try some of the best dishes from Bologna, go to the Trattoria AnnaMaria ( Via delle Belle Arti, 17/a), one of the most traditional premises in the city. All the photographs on its walls are evidence of the hundreds of performers and celebrities that have eaten at its tables.

The crescentina or crescenta is the best local bread. Spongy and tasty if it is homemade. And if you accompany it with local mortadela salami and regional parmesan cheese, then you've got a meal. In this regard, a trip through the Salsamenteria Tamburini (Via Caprarie, 1) is a must - a unchangeable classic that has know how to adapt to times and demand. In fact, its wine cellar is the corner that is most in demand and is also the cosiest of the whole establishment.

Very nearby you also have the Osteria del Sole (Vicolo Ranocchi, 1/d) - a unique premises wherever it is. You are only asked to drink here because you can bring your own snacks even from home. Nevertheless, people usually arrive with their piadine, focaccie and cold meats to share them with the whole table. If you don't mind drinking one thing or another, we recommend that you try the homemade beer while you're here. The birra is a must.

For wine tastings, pass by Alla Porta Vini (Via Castiglione, 79/a). Every day, they open a few bottles of wine for tasting. Amongst their preferences, those from the Southern Alps and from small producers.

La Osteria al Cappello Rosso (via dè Fusari, 9/b) is another of those delightful places where you will also want to eat everything you see. Local products used in traditional recipes and served in generous portions. Don't miss its selection of cold meats or its Lambrusco (a source of pride for the region) or its 'torta bolognesa', the typical cake of the city made from rice.

If you feel like an ice cream, don't hesitate to choose La Sorbetteria Castiglione (Via Castiglione, 44) or Il Gelatauro (Via San Vitale 98/b). And if instead you prefer a creamy ice-pop (on a stick), go to the Cremeria Sette Chiese (Via Santo Stefano, 14/a).

The Mercato delle Erbe (Via Hugo Bassi, 25) will charm your senses, above all those of sight and taste. Although there are many shops with good, fresh products. There is also the seafood. See for yourself at the Pescheria del Pavaglione (Via Pescherie Vecchie, 14) where, besides buying, you can taste an original Aperyfish - which doesn't need to be translated.

Also go to Paolo Atti & Figli (Via Caprarie, 7), a shop with traditional gastronomy known for the quality of its breads, cakes and fresh pasta.

Elegant and refined, Zanarini (Piazza Galvani, 1) is the historic café of the city and one of the preferred places for locals to have breakfast, a good cup of coffee and a better cake, and, of course, to see and be seen.

And another very special place, leaving the centre of the city behind: Il Cerfoglio, a restaurant committed to organic produce and km 0 in light, healthy and well made dishes (Via John Fitzgerald Kennedy, 11, San Lazzaro).

"¿Will I find Maga? Many times I just had to look out coming by rue de Seine, the arch that takes you to Quai de Conti, and only the olive and ash light floating on the river let me distinguish the forms, its tiny shape by Pont des Arts, sometimes walking from side to side, sometimes stopped at the iron parapet, leaned against the water. And it was so natural to cross the street, ascend the steps on the bridge, get in the tiny waist and get closer to Maga smiling unsurprisingly, convinced like me that a chance encounter was the less casual in our life, and that people who arrange dates is the same that needs ruled paper to write each other or that pushes from the bottom the tooth paste

Quai de Conti: The novel, like our route, starts at rue de Seine, Quai de Conti and Pont des Arts, places where Horacio y Maga met each other, with a special symbolism for the author considering the centric location of this part of the route that take us along the left side of Seine river. Our protagonist also mentions the library Mazarine, located at the other side of the arch and the most antique library in the country.

Pont des Arts: As a connection between Institut de France and Louvre (previously known as Arts Palace), you can find the centric iron bridge where Oliveira got drunk at the first part of the book. Now full of lockers promising everlasting love, the panoramic views over Cité island and all the bridges is one of the most beautiful pictures you can take of the city.

Louvre Museum: Even Rayuela is full of cultural references, when we are talking about visual arts Louvre museum is the only reference Cortázar gives us about this city on this field. The most visited arts museum in the world appears on our way after taking Pont des Arts. This place is a must to anyone because of its wide collection and masterpieces such as “La Gioconda” by Leonardo da Vinci and a stunning building including, since the 80s, a great glass pyramid that you should visit.

Rue du Jour: The latest partners of Horacio at the city, homeless people, feed themselves thanks to the soup dish that they receive here. By the church Saint Eustache, people in need receives food at this street, located at Les Halles, a gardened area right in the city centre where there are two more places we will pass by.

"Au chien qui fume" restaurant: Located at Rue du Pont Neuf, this is one of the cafés named at chapter 132 and is also a meeting point for Etienne and Horacio on the way to the hospital to visit Morelli. This is a typical French restaurant, with an elegant and traditional decoration and a careful cuisine selection. Following this street we find the next stop…

Pont Neuf: Even it name means new bridge, it’s completely the opposite, and it’s the oldest. Here we say goodbye to Horacio and Maga in this route. Made of arches, the bridge took almost 30 years on the making and during the 18th century it was the centre of crime and commerce in the city. Passing by the bridge we will go back to the left side of the Seine, where we will stay.

Rue Dauphine: Even it’s part of a dispensable chapter, Pola, Horacio’s French lover, lives in this street. The street starts after Pont Neuf, and it was named after France’s dauphine, Henri IV’s son.

Rue de la Huchette: This is another place where Horacio thinks his lover can be at. A must-visit pedestrian street with many famous places like the theatre Huchette and Caveau de la Huchette. We pass through from the boulevard Saint-Michel until we reach Rue du Petit-Pont, before we get to the Notre-Dame cathedral.

Notre Dame: Chance makes the protagonists meet again at this iconic landmark of the city, one of the most beautiful and most visited French gothic cathedrals, which was finished on 1345 and is located at the Cité island. Who hasn’t heard about Notre Dame and its famous hunchback? Either as the Quasimodo by Victor Hugo or by Disney, the gargoyles are part of the collective imaginary

Rue du Sommerard: The street where Horacio Oliveira lives and one of the oldest in the city, which during the Roman age took to the baths at Cluny. Next to the famous Saint-Germain Boulevard, Sommerand is nonetheless more relaxed and perfect to take a relaxed walk.

Rue Valette: This is a magic place for our protagonists, in one of the hotels here they consummate the relationship for the first time and here is also where Horacio took Pola. Rue Valette is at the quarter of Sorbonne University and follows the Rue de Carmes, the meeting point for students.

Rue Monge: One of the places where is believed Maga lived after separation and the death of his son Rocamadour. This is a important street located at the university area on the Paris district nº 5.

Rue Monsieur Le Prince: The incomprehensible chance also takes place at this street, which used to be a road and leads to the Edmond Rostand Square along the Saint-Michel Boulevard. Notice also that Polidor restaurant, where the story of Cortazar’s "62 A Model Kit" takes place, is also here. We pass by this place if we go to Odeon.

Rue l’Odéon: Remember here, with Horacio, parts of his relation with Maga, eating at Carrefour de l’Odeon and riding the bike by Montparnasse. The impressive Odeon theatre gives the name to this street and neighbourhood, full of life by night and day, where we can find all kinds of bars, cafés and restaurants. From here, take Saint-Sulpice Street to arrive to the next stop.

Rue de Tournon: This is the street where we walk back to Madame Trépat house, with Horacio. Even traditionally it was full of old bookstores, many luxury fashion shops moved here on the past few years. It’s one of the most prestigious streets, from the Senate and across Saint-Sulpice street, which lead us to the end of this route. Mario Vargas Llosa lived here too.

Montparnasse cemetery: The last stop in this route is also the location at the last chapter of Rayuela, where Horacio takes a little paper and also where Julio Cortázar was buried. At the hearth of Montparnasse neighbourhood, this was inaugurated on 1824 and is the second in the city, with many remarkable people resting here along with the author, such as Simone de Beauvoir, Samuel Beckett or Jean Paul Sartre.

7 Café Terraces in Tangier

Truman Capote wrote of Tangier: “Almost everything in Tangier is unusual. Before coming here you should do three things – be inoculated for typhoid, withdraw your savings from the bank, say goodbye to your friends…” Capote was there in the summer of 1949, but Tangier still holds out that invisible but very real lure which the author of Breakfast at Tiffany’s (1958) and In Cold Blood (1965) observed. “Tangier is a basin that holds you, a timeless place; the days slide by less noticed than foam in a waterfall.” That is how the celebrated American writer accounts for so many travellers – artists, writers, bohemians – landing in Tangier for a short holiday and then deciding to settle there indefinitely, simply “letting the years go by”. That is what today’s route is about – sitting back on one of the terraces and watching the city bustle unfold.

At the Top of the Kasbah

1. Breakfast at Tiffany’s, but at La Maison Blanche Riad-Hotel

We can’t think of any better way to start the day in Tangier than by breakfasting on the panoramic terrace of La Maison Blanche Riad-Hotel, located at the top of the Kasbah, alongside the main gate to the erstwhile fortress. After spending a peaceful night in one of their nine rooms – each one with its own décor, dedicated to artists who helped turn Tangier into a fascinating, cosmopolitan place (Paul Bowles, Juan Goytisolo, etc.) – you will witness first-hand the leisurely awakening of the city. Enjoy the light that so impressed Matisse, the sea and the multi-coloured rooftops. Price per room: from 100 to 150 euros, breakfast included.

The Heart of the Medina

Once you feel rested and well fed, it’s time to wander through the Medina. Whichever way you enter, within two minutes you get hopelessly lost in the chaotic maze of alleyways, those tunnels with coloured walls where no shaft of sunlight ever penetrates but which are always filled with light. Both sides of the pleasant grotto are lined with all kinds of workshops and businesses. Cobblers, basket-makers, jewellers, dairies, barber shops, spiceries… The toing and froing of people and goods is constant. Everything gets conveyed in hand-carts, as cars wouldn’t fit in these narrow streets. The agreeable chaos is augmented by hawkers of fruit, fish, mint, potatoes, broad beans, nougat, brick-a-brac, etc. But, the Medina is also peopled by leisurely Tangerines who practise the healthy pastime of sitting at a terrace or in the bright interior salon of a café, and letting time go by.

2, 3 & 4. Tingis, Central and Fuentes… in the Warmth of the Petit Socco

The small but crowded Petit Socco square is ideal for observing one of the nerve centres of Tangier’s Medina. There are various options, but the most typical and recommendable ones include the airy salon and terrace of the Café Tingis, where the time-worn sign claims “everything always fast and fresh”. Similarly, the Café Central, located just opposite, or the balconies of the Café Fuentes, on the upper floor. To get there, your best reference point is the Petit Socco square – officially known as the 9 April 1947 – which is a two minutes’ walk along the Rue Siaghine. On your way, you will catch sight of the facade of the Spanish Catholic Mission, next to the Alcalá department store – “fabrics, novelties…”. This is followed by numerous money-changing booths, shop windows plastered with vintage cameras and a host of jewellery stores.

5. Café Ibn Batouta, in the Heart of the Medina

Somewhat more hidden, but more authentic, is the Café Ibn Batouta, located in the heart of the Medina. It takes up several floors, although regulars hang out on the first floor where they often watch football matches on the television. At the top of the narrow staircase you suddenly come onto a split-level terrace where the youngsters of Tangier meet to drink tea, chat and smoke, with the sky as their only witness. From here, the sea is not visible, but you do look out over a beehive of rooftops and roof terraces bedecked with satellite dishes and laundry hanging on the lines. Neither is it one of the city’s most comfortable joints, but indeed one of the most genuine. The affordable prices – a large glass of mint tea costs just 6 dh – draw many students to the city. Next to the small bar counter where the tea is made hangs a photo of the actor, Matt Damon, of The Bourne Ultimatum fame. Regulars enjoy telling new customers how the scenes where the star jumps between buildings, from one balcony to the next, was filmed here.

Atlantic Views

6. Café Hafa, Paul Bowles’ Favourite

The staggered terrace of the Café Hafa is unique. Overlooking the ocean, on the top of a cliff, it is absolutely always jam-packed with youngsters drinking tea, smoking and playing table games. Opened in 1921, it was the favourite of Paul Bowles, and the Rolling Stones also came here, among other celebrities. The tea is tasty and cheap – less than 1 euro – and, although the plastic furniture detracts from the café’s charm, it is ideal for having a restful break, reading, chatting and gazing out over the blue horizon.

Getting there is a cinch – you leave the Kasbah by the main gate next to La Maison Blanche and take the street that goes up to the Phoenician necropolis, a popular spot among Tangerines, who often spend the afternoon there. Just beyond it, a bright alleyway where young men mill around buying and selling loose cigarettes leads to the Café Hafa, where you can also grab a bite of one of the local snacks.

In the Coolth of the Kasbah

7. Morocco Café – Peace in the Shade of a Centenary Rubber Plant

Located just 20 metres from the main gate into the Kasbah, the quiet terrace of the Morocco Café is ideal for having some tea or any drink and even ordering the dish of the day, a salad, a quiche, etc. All the food is home made. The café is somewhat more upscale than average and prices are more like those on the opposite side of the Gibraltar Strait. For instance tea – served in a small teapot – costs 18 dh. It opens at 9 in the morning, except on Mondays, which is their day off. The building also houses the Morocco Club, a piano bar where by night you can enjoy good music and excellent cocktails in a pleasant atmosphere.

Bologna Eating in the Cradle of Italian Cuisine

Tucked away between Venice and Florence, while not Italy’s most popular destination, it is certainly one of the cities that best distil the essence of the country. Bologna is nicknamed “the Learned One”, as its university is one of the oldest in Italy. It is also known as “the Red One” on account of the reddish hue of the city’s rooftops. But the most endearing epithet of the capital of Emilia-Romagna is “the Fat One”. In Bologna, gastronomy is a religion and it would be a sacrilege not to observe the ceremony involved in sitting down to table, while the traditional recipe for tortellini is jealously guarded in the city’s Chamber of Commerce vault. We ventured into the cradle of Italian cuisine and wandered through the streets of Il Quadrilatero, its historic centre (the second largest and best preserved in Italy), in search of the best restaurants, trattorie and osterie.

Mercato di Mezzo
In the heart of Il Quadrilatero, Bologna’s historic centre, stands the Mercato di Mezzo, one of the hotspots of any gastro route through the city. Its history goes back to the Middle Ages, a period when the shops and street stalls were divided up according to guilds. This state of affairs endured until the early 20th century, when the system was gradually disbanded. After being restored over the last few years, the Mercato di Mezzo, with its stalls selling fresh pasta, local wines, meats, fish, vegetables and cheeses has become the must-visit spot for all demanding foodies who happen to be in Bologna.

Osteria del Sole
You won’t see any sign or poster pointing you to what is one of the most emblematic establishments in town, so it is not easy to find. Located at Vicolo Ranocchi 1/d, between the Via degli Orefici and Via Pescherie Vecchie, you will come across something resembling a small rectangular opening in the wall. Don’t hesitate to go in, as this is the Osteria del Sole. It opened in 1465 and is Bologna’s oldest canteen. According to many in the know, in the whole of Italy as well. It breathes authenticity throughout. However, if you’re feeling peckish, this is not the place to still your hunger, as they only serve wine – and what wines, too! – beer and aperitifs like grappa or the local liqueur par excellence, Amaro Montenegro. They do let you take your own food, though, whether in a lunch box or from some nearby trattoria. Quite an experience!

Trattoria Tamburini
Trattoria Tamburini
is one of those places where you would eat everything, including the tablecloth. Opened in 1932 on the premises of what was once one of the most popular butcheries in the city, Tamburini is the ideal choice for an aperitif. If your taste buds are up to having an orgasm, take up a seat on the terrace and taste their exquisite cheese and sausage boards, washed down with a fine lambrusco. They serve what are unquestionably the best mortadella and parmesan cheese in Bologna. If you feel like something heartier and more consistent, you can always go inside and wolf down some tortellini. You can’t go wrong with the ones they serve up at Tamburini.

Paolo Atti & Figli
Tortellini, zuppas, torta di riso, pane bolognese... the folks at Paolo Atti & Figli have been pasta artists since 1880. Their centuries-old workshop is located at Via Caprarie 7, while their other shop is at Via Drapperie 6. Go up close and watch how Elda, one of the most respected sfoglina (pasta makers) in Bologna, delicately and purposefully kneads the pasta based on eggs from hens who feed solely on corn and semolina brought especially from Altamura, in Puglia. They do not add any salt at Paolo Atti & Figli as they claim it kills the flavour.

Trattoria Gianni
Here is one of those secrets you’re reluctant to share with anyone, so that the next time you visit the city the restaurant is still frequented by mainly locals, with just a few stray tourists. Modest and inviting (these are definitely the ones to go for) and just a few steps away from the central Piazza Maggiore, Trattoria Gianni is the place to go all out on tagliatelle al ragú alla bolognese, tortellini in brodo (very similar to the Catalan “sopa de galets”), cotoletta (breaded veal cutlets) with baked potatoes… The premises are small, so you are advised to book in advance. Otherwise, you will have to wait a while, although the waiters will help you kill time by plying you with glasses of prosecco on the house.

Al Voltone
Their claim to fame is having been the first restaurant in Bologna to make their culinary creations using products sourced exclusively from the province of Emilia-Romagna. Popularly known as La Torinese 1988, Al Voltone focuses on simple cuisine with a steadfastly traditional essence. Or, twice good, to put it another way. Apart from the omnipresent, irresistible tagliatelle and tortellini, the menu at Al Voltone also features such culinary temptations as green lasagna a la bolognese. And, for dessert, you can’t possibly refuse to sink your spoon into their piccolo pecato with custard and chocolate.

The Grand Ambassador of Bologna
It is regarded as a lesser pleasure, but the genuine variety is exquisite and sublime. Mortadella – there are various theories about the origin of its name – is the grand ambassador of traditional Bolognese cuisine around the world. The story goes back to the Renaissance, when it is believed that Cristoforo da Messisbugo, carver to Cardinal Ippolito d’Este, devised the original recipe. Bologna mortadella is made exclusively of meticulously selected pork which is ground into a fine paste, to which are added nuggets of fat (never less than 15% or more than 28% of the total meat surface), endowing it with a characteristic flavour. It is then stuffed into a casing of natural or artificial gut. Eaten with a few slices of freshly baked bread and a piece of cheese is bliss on the palate.
